Bell peppers are a fresh, crisp, healthy, and flavorful plant to add to your meals! Rocking oodles of vitamin C and beautiful color, they can easily be used to easily veggie-load so many things.

I love enjoying bell peppers in the classic fajitas and salads, but they are also amazing in chili, sauces, soups, and (of course) stuffed peppers. I don't forget breakfast! Bell peppers are amazing in smoothies or tossed into egg cups.
