Greek Sheet Pan Chicken and Veggies with Feta
This Greek sheet pan chicken and veggies is the kind of weeknight dinner that keeps life easy… but still delivers on some serious flavor. Bright, lemony, herby goodness, loads of colorful veggies like artichoke hearts, zucchini, tomatoes, bell peppers, and red onion, plus juicy chicken—all roasted together on one pan in just over 30 minutes. Finished with an optional (but highly recommended) sprinkling of feta to tie all those Mediterranean flavors together.

Oh man….this sheet pan dinner 🤤
I love a dinner that makes me feel like I tried really hard… without *actually* having trying that hard. And sheet pan dinners? Always the move. This Greek sheet pan chicken has been on TNN for years, but after almost 13 years of recipe developing, I’ve been going back through old recipes to make sure they still shine. And this one? Still sososososo good. I remade it recently, brought some to my neighbor, and she declared it her favorite thing I’ve ever made—which felt like a pretty strong endorsement 😅
So, if you’re looking for an easy, 30-minute weeknight dinner tat makes you feel like a kitchen superstar, this Greek sheet pan chicken is it. Bright, lemony, herby, loaded with colorful veggies, and all made on one pan with minimal cleanup.
It’s the same easy, toss-it-all-on-a-pan energy as my Sheet Pan Gnocchi with Veggies and Chicken Sausage, just with a fresh Mediterranean twist. Juicy chicken, zucchini, red onion, bell pepper, and tomatoes all roasted in a simple marinade. Oh and a sprinkle of feta. you don’t have to….but I’m going to tell you, you are gonna want to. Legit, the hardest part of this recipe is slicing the veggies—and even that’s flexible. Use what you have, swap things in and out, make it yours. It’s one of those dinners that looks great, tastes even better, and everyone actually eats.
And if you have leftovers? Even better. This Greek sheet pan chicken makes an easy next-day lunch—tucked into a pita or tossed over some greens or cooked rice.
Let’s go ahead an make this together…Just you and me.

Greek Sheet Pan Chicken And Veggies with Feta
Ingredients
For chicken
- 1½ tablespoons lemon juice
- 1 tablespoons avocado or olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- ¾ teaspoon kosher salt, or to taste
- ground black pepper , or to taste
- 1½ pound boneless skinless chicken breasts, , cut into bite sized pieces
For veggies
- 1 large zucchini, diced small
- 2 cups grape or cherry tomatoes, halved
- 14 ounces canned artichoke hearts packed in water, drained, patted dry and roughly chopped
- ½ medium red onion, thinly sliced
- 1 large bell pepper, chopped small (I find a red, yellow or orange bell pepper works best)
- ¾ teaspoon kosher salt
- ½ teaspoon ground black pepper, or to taste
- ½ teaspoon garlic powder
- 1 Tablespoon avocado oil or olive oil
- ½ cup feta cheese
Instructions
- Preheat the oven to 400° F and line a large edged sheet pan. Mine was 21”x 15”. If you don’t have one that big, you can cook the veggies and chicken on 2 smaller separate sheet pans.
- In a large bowl, whisked together lemon juice, oil, minced garlic, oregano, parsley, salt and black pepper. Add the chopped chicken and toss to coat. Place the bowl in the fridge and let the chicken marinade while you prep the veggies or about 10 minutes.
- Spread the chopped veggies out on your baking sheet. Drizzle the veggies with the oil and then season with salt, pepper and garlic powder. Toss with your hands or a spoon on the baking pan to coat the veggies.
- Takethe marinading chicken out of the fridge. Spread the veggies out in a single layer on your sheet pan, then gently push some aside to create little spaces for the chicken pieces. Nestle the pieces of marinaded chicken right into those gaps so everything cooks evenly.
- Bake for 18-20 minutes or until chicken is no longer pink in center and has an internal temp of 165° F. Water from the vegetables will naturally release during the cooking process, so be careful of the hot liquid in the baking sheet when removing it from the oven.
- Drain off excess liquid, sprinkle the feta over the hot veggies and chicken and enjoy topped with some fresh chopped parsley over cooked pasta, cooked rice or even tucked into a pita.

This was an easy, delicious recipe. The family vote: “Keep this one in the rotation”. Yummy!!😋 We will make this again. Easy, quick, and flavorful!
Could I mix all the ingredients together and freeze in a freezer bag? Then would I need to thaw it first and roast in the oven or could I place in a crock pot?
Made this for dinner last night and LOVED it! The flavors were so good together. I subbed thighs for breasts, and I also broiled it for 4 minutes after the 20 minutes were up, to get more of a blister on the tomatoes. Totally fabulous, and will definitely make again! Thank you!
I am so glad you enjoyed it!
This is one of my favorite “go-to” recipes & my family loves it, too! It has been an easy addition to weeknight cooking & we even use it during holidays when we need a break from heavy foods. I add kalamata olives to add a little more saltiness & usually double the recipe since we all love it so much! Thank you so much for sharing!!
I’m so glad you enjoyed it!
Love this recipe! Do you by chance have the nutritional info on it, specifically calories? Thanks so much!
Do you know if this reheats well? I’m looking for simple recipes I can make one day and reheat for several days.
In my opinion, yes! I often enjoy it as leftovers
Thanks for this great recipe! I have been making this for over a year pretty regularly.
Several people have asked me for it! I tweaked it a bit by adding an additional 2 tsp. of Italian seasoning. Then I sub an additional large zucchini for the artichoke hearts. I also add a medium-large red onion thinly sliced and a clove of fresh garlic. I have also added a bit of eggplant one time. I usually add an additional T of oil because the volume of veggies is larger.
Love your additions, Christina! I need to try those next time I make it. And hank you for sharing this recipes with others AND leaving a review! Both mean so much to me.
Love love love this recipe! I make it all the time. Serve it with rice. It’s truly easy and delicious!
I’m so glad you love it so much, Meg! Thanks for taking the time to leave a review. Always so appreciated.
This recipe was soooo good and soooo easy! I’ll be making this often. Thanks so much!
yay! I’m so glad you loved it! 🙌 It seriously makes my day to hear that. And YES—easy + delicious is the goal always. Can’t wait to hear when you make it again!
Really yummy and delicious with a scoop of tatziki! Thank you!
Yay, I’m so glad you enjoyed it, Erin! Tzatziki on the side sounds incredible—definitely stealing that idea. Thanks so much for trying the recipe and letting me know!
This is probably the best sheet pan meal I’ve ever made! The flavors are so good. Our 8 year old loved it too. With the leftovers, we’re making pitas or putting it on salads for lunch this week.
I always so love it when I see your reviews of a recipe, Devan! You are always so trusting in my recipes (I appreciate that!) and I am delighted this one was worth the hype I gave it on IG! And the fact that your 8 year old loved it is just icing on the cake! Enjoy those leftovers. They are so so so good!
WINNER WINNER CHICKEN DINNER!!! This was so delicious! I served it over pasta and it made a perfect meal. I added the feta to the roasting pan right before the end and broiled everything for a few minutes to get a little browning. The chicken ended up a little overcooked because of this, so next time I think I’ll cut the cooking time even shorter before broiling for a few minutes. I used two “quarter” sheet pans (the regular size most people have), and they were full. Love that this has so many veggies in it!
Yesss! Love hearing it was a hit, Carissa! Serving it over pasta and broiling the feta at the end sounds so good (noted for next time!). Thanks for the idea and leaving a review, and so glad you loved the veggie-loaded vibes!
SO good and easy! Truly one of the best sheet pan meals I have ever had, and it’s so simple! We serve it over basmati rice and a scoop of tzatziki on the side. 10/10!
Ahh this makes me so happy to hear! So glad you loved it—and basmati rice with tzatziki on the side sounds like the perfect way to serve it. Thanks so much for taking the time to share your review!
Absolutely delicious, nourishing, and simple to make! I doubled the recipe so we can have leftovers another time. 🙂
Doubling this one is THE move! The leftovers are just magic. So glad you loved it as much as we do, Michelle!
Delicious & so easy to make. Leftovers included!
Yay!! So glad you loved it
I have never had success with a one pan meal before so I was skeptical, but this was delicious! My wife said she could have this once a week and I agree! I went back for a third helping. Will definitely make again and share with family and friends.
Wow! I am so glad it restored your faith in sheet pan recipes💚 And so glad you two loved this one as me and my crew do! Thanks for coming back and sharing, Suzanne. I love finding these kinds of comments waiting for me in the morning.
Sooo good! Truly delicious and healthy! Love that my husband and I had leftovers and were able to enjoy for 3 dinners! Taesha, you and your recipes are amazing! Thanks so very much!
