Truth: I’m not big on zucchini. Neither is my family. However, zucchini is one of my staple veggies to keep on hand for easy veggie-loading!

Why? Because this beautiful summer squash can easily go sweet or savory in SO many different dishes. And, in some dishes, the zucchini can almost melt into other ingredients, making it perfect for those who don’t love the texture of zucchini (I’m over here waving my raised hand, by the way).

And even if zucchini is your jam, there’s only so much raw or sauteed zucchini one can eat when the gardens and grocery stores are bursting with it during the summer. That’s where my veggie-filled recipes come in! I’ve found some pretty clever ways to use up and ENJOY that summer squash. Veggie-loading, after all, is all about adding vegetables in ways that feel good AND you enjoy!

So, go ahead zucchini-iffy-eaters and zucchini-lovers alike, here are some of my tried-and-true (and reader loved) zucchini-loaded recipes….

Fun fact….

Have you ever wondered the difference between zucchini and summer squash? After all, they are both squashes that grow bountifully in the summer. Turns out, zucchini ARE summer squash. There are actually over 20 varieties of squash! The yellow variety we also find readily in the grocery store are often referred to as summer squash (which they are!)—but summer squash covers zucchini (among others) as well! Both can be used interchangeably in recipes…including all the recipes linked below!

This Easy Zucchini Salsa is the perfect addition to any summer spread. Quick to make, no cooking and loaded with fresh flavors.

Ingredients
 

  • 1 medium zucchini , (12-14 oz), trimmed and cut into 1/8-inch dice (about 3 cups)
  • 4 large plum tomatoes, or other large tomatoes, cut in half, seeds removed, and cut into 1/8-inch dice (about 3 cups)
  • 1/3 cup finely chopped red or white onion
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon lime zest
  • 2 tablespoons lime juice
  • 2 tablespoons extra virgin olive oil
  • 3/4 teaspoon salt, or to taste
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • hot sauce, to taste (optional)

Instructions
 

  • Add all ingredients to a large bowl. Stir to combine. Taste and add more salt or seasoning as needed.
  • Salsa is best served within a few hours of making. As salsa sits, more liquid will release from the vegetables. You can drain off some of the juices if desired or enjoy it as is.
