Extra Veggie White Chicken Chili
Creamy, comforting White Chicken Chili with a veggie-loaded twist. Shredded chicken, white beans, riced cauliflower, zucchini, and green bell peppers all mingle in a rich, flavorful, creamy broth. Cook it on the stovetop, in the slow cooker, or in the Instant Pot…it’s a cozy + satisfying dinner that fits whatever your weeknight needs!

The first fall leaf, the first cozy craving….
The second the air turns crisp and my morning coffee calls for a sweatshirt, my brain flips straight into soup-and-stew mode. Yeah, I live for soupy season, guys.
This Extra Veggie White Chicken Chili has been living in my head for well over a year. I’ve even made it on the fly a few times; it always came to mind whenever I was stirring a pot of my beloved Extra Veg Chicken Enchilada Soup or when I’m rolling up my very favorite Green Veggie Salsa Verde Chicken Enchiladas. I loved elements of both recipes so much that I wanted them tucked into one perfect, hearty, slightly spicy soup that could hold its own as a full dinner. (And trust me…between the chicken, veggies, and beans, this chili is a complete meal. You can’t convince me otherwise.)
We love topping big bowls of this chili with the crunch of tortilla chips (a great way to use up those last handfuls at the bottom of the bag), a sprinkle of shredded cheese (we’re as much a cheese family as we are a veggie family), and the creamy, fresh addition of diced avocado…because I always love to tuck a little more green into a meal when I can!
My best advice? Make a big pot. The leftovers only get better after a night in the fridge, and they’re a lifesaver on busy workdays. Even as a food blogger, I somehow forget to feed myself until the “hangries” hit…but having this chili waiting in the wings means lunch is ready to go in minutes, and I can get back to work without skipping a beat.
Let’s make this chili together. Just you and me….

Extra Veggie White Chicken Chili
Ingredients
- 1 Tablespoon olive oil
- 1 medium green bell pepper, diced small
- 1 medium onion, chopped
- 1½ cups (240 g) frozen riced cauliflower
- 1 medium zucchini, grated
- 1½ pounds (680.39 g) boneless, skinless chicken thighs
- 1½ teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1½ teaspoons cumin
- 4 ounces canned mild green chilis
- 1 cup (242 g) mild green salsa verde
- 3 cups (709.76 ml) low-sodium chicken broth
- 30 ounces (425.24 g) canned white beans, such as Great Northern or cannellini, drained and rinsed
- 4 ounces (113.4 g) cream cheese, cut into pieces
- ¼ cup (4 g) chopped cilantro, plus more for garnish
- 1 (1) lime, cut into wedges (optional)
- Toppings: sliced avocado, tortilla chips, chopped fresh cilantro, grated cheese
Instructions
Stovetop instructions
- Add oil to a large Dutch oven or soup pot over medium heat. Sauté the onion, pepper, cauliflower, and zucchini until softened, about 8 minutes.
- Nestle the chicken into the bottom of the pot then sprinkle with the salt and spices (garlic powder, onion powder, cumin). Stir to coat the chicken and cook for a minute to lightly toast the spices.
- Add the mild chilies, salsa verde, and chicken broth to the pot. Cover and simmer until the chicken is cooked through and has an internal temp of 165℉, about 15 minutes.
- Remove the chicken from the Dutch oven and transfer to a plate. Shred the chicken, then add back to the pot.
- Stir in the white beans, cream cheese and cilantro. Continue to stir until the cream cheese has melted into the soup. Simmer for 5-7 minutes to let the beans soak up some of the flavor.
- Taste the soup and add more salt as needed. Portion out the soup and squeeze a wedge of lime over each portion. Garnish with extra cilantro and whatever toppings you like!
Slow cooker instructions
- Add the oil, onion, pepper, cauliflower rice and zucchini to your slow cooker. Nestle the chicken into the veggies and then sprinkle with the salt and spices. Stir to coat the chicken.
- Add the can of chilis, salsa verde, and chicken broth to the pot. Cover, then cook on LOW for 5-6 hours or HIGH for 3 hours; or until the chicken thighs have an internal temp of 165℉ and can be easily shredded. Every slow cooker cooks a bit differently, so start checking your chicken early to avoid overcooking it.
- Remove the chicken from the slow cooker and transfer to a plate. Shred the chicken, then add back to the slow cooker. Stir in the white beans, cream cheese, and cilantro. Continue to stir until the cream cheese has melted into the soup.
- Portion out the soup and squeeze a wedge of lime over each portion. Garnish with extra cilantro and whatever toppings you like!
Instant Pot Instructions
- Turn your Instant Pot's sauté function and add the oil to the pot. Once hot, add the onion, pepper, cauliflower and grated zucchini and cook until softened, 2 to 3 minutes.
- Nestle the chicken into the bottom of the pot then sprinkle with the salt and spices. Stir to coat the chicken and cook for a minute to lightly toast the spices.
- Turn off the saute function. Add the can of chilis, salsa verde, and chicken broth to the pot and stir everything together.
- Place the lid on your Instant Pot. Press the manual/pressure cook button and set the timer to 10 minutes. When the timer is up, let the pressure naturally release for 5 minutes before manually releasing the rest.
- Once the pressure is released, carefully remove the lid. Remove the chicken from the Instant Pot and transfer to a plate. Shred the chicken, then add back to the pot.
- Stir in the white beans, cream cheese, and cilantro. Continue to stir until the cream cheese has melted into the hot soup. Portion out the soup and squeeze a wedge of lime over each portion. Garnish with extra cilantro and whatever toppings you like!

This sounds delicious. I have a couple of questions. Do you think I could use chicken breasts as we don’t care for thighs? Also, would it still be yummy without the cream cheese. (my husband doesn’t like “creamy” anything.
Hi Dale! This chili will absolutely work with chicken breasts if you prefer. Just make sure they are cooked through before shredding, since chicken breasts can be much thicker than chicken thighs, so they might need a touch longer cooking. Also, feel free to omit the cream cheese if creamy isn’t your husband’s thing! It’ll still be nice and flavorful!
I was nervous to make it for my picky eater and she rated this an 11 out of 10! We all loved it, will be perfect for cold winter evenings!
An 11 out of 10?! That’s the best kind of feedback! I’m so glad it won everyone over , Alicia! Thanks for trusting me when feeding your fam! 💛
I made this using the Instant Pot instructions and it was a huge hit! The flavor was amazing and the addition of the riced cauliflower was brilliant… it almost melted in. Looking forward to making it again!
Oh yay!! I am so glad you enjoyed it so much, Lauren!
I never write reviews but always read them. Just had to jump in here and say THIS RULES! Made it exactly as you explained (well – threw in a cup of chopped kale and didn’t grate the zucchini- just used my handy dandy food chopper since the onion and pepper went through there). Thanks. This is going into the regular rotation.
Ahh, I love this so much! Thank you for coming back to share, Barb! 💛 I’m so glad it’s going into your regular rotation. Love the kale addition!
This was delicious! I’ve been on the lookout for a new white chicken chili recipe and this one turned out perfect. Thank you!
So glad you loved it! It’s quickly become one of our family’s favorite dinners + I’m thrilled it hit the spot for you too. Thanks for taking the time to share!
Made this in the crock pot. Was a hit! My husband who doesn’t like beans and never prefers chicken had 2 bowls. Day 2 was 1000000 times tastier than same day! So if you meal prep for the week this will only get better. Made it exactly as the recipe said.
This makes me so happy to read, Renne! Love when a recipe wins over even the skeptics 🙌 And yes …it makes SUCH great leftovers! Definitely a meal prep keeper!
SO good! The warm hug I needed after a long rainy day. The right balance of creamy, spice, and hearty. And, you know its good when 3 kids eat with zero complaints, and all 3 ask for seconds! This will definitely be in the rotation here!
There is truly nothing better than a cozy bowl of chili on a rainy day…and kids jumping on seconds is the ultimate compliment. So happy it’s a hit with the whole crew, Megan!
I just made this for dinner and had to come right here to say this was amazing! My husband and I both stopped mid-meal multiple times to say how good it was. And my husband normally doesn’t touch leftovers but he said he is looking forward to these leftovers. I made it exactly as written and it was perfect 🙂
Susan! I am dazzled you and your husband loved this so much! I think he will find that the leftovers are even better! Thanks for swing back and leaving such a lovely review!
We loved this version! My husband always requests a White Chicken Chili when the weather changes and I love this veggie-loaded version. I used chicken that was already cooked and upped the green chilies to 7 oz because I didn’t have salsa verde. So excellent and delicious!
Ahh I love this so much, Jessica! White chicken chili season is officially here! So glad it was a hit (and husband-approved!)
Delicious, easy, and made enough to freeze for another meal!
Yay! I am so glad you loved this one, Laura! I adore having this as a freezer stash. Its amazing to take out on the nights I simply can’t think about cooking!
This was a huge crowd pleaser! I left a football game at 4.15pm, got home, chopped/grated all the veggies in the food processor and had this gem on the dinner table before 6pm. Thank heavens I made double. Will definitely be making it again!
Yay! I love an easy dinner win! So glad this was such a hit and, yes, I love when I make a double batch of a dinner my family loves. We just polished off our freezer stash of this one and I need to make another batch for the freezer so I can always have a bowl on hand!
Another TNN recipe that will be part of my regular rotation. I made three modifications that show how adaptable Taesha’s recipes are. I’m just not a fan of green peppers, so I went with a yellow pepper. I wasn’t feeling the zucchini this time, so added a second yellow pepper! And, used a thin sliced chicken breast, which I cut in half, in place of thighs. I checked them at 10 minutes and they were good to pull out for shredding. We also wanted a bit of heat, so used a medium green salsa instead of mild. We were able to serve four adults for dinner and have some left to put in the freezer for later!
I am so glad my recipes are so flexible and forgiving for you! That is always my goal! So happy you all loved this chili as much as we do, Shelly. We’ve quickly become obsessed over here.
Holy moly! Stop whatever your dinner plans are tonight and make this instead. My husband and I both gave it 20 out of 10 stars. He even told me to add this to our permanent line up. I can’t tell you how good this is, so please go make it!
I used cubed chicken breasts instead of thighs because its what I had on hand. Worked out great. I also added a whole chopped jalapeno to the veggies in the beginning because we like an extra kick! We already ate the leftovers as lunch today and I am already looking forward to making it again.
Don’t skimp on adding the avocado slices when serving! It was such a bonus on top of an already absolutely delicious meal.
I’m so glad you both loved it—and 20/10 stars?! I’ll take it 🥹🙌 Thanks for coming back and sharing, Katrina!
Wow this was delish. My husband and I loved it and the kids dipped their tortilla chips in it, so that was better than expected hah! Will def make again!
Wooohooooo!I am so glad it was so beloved by the whole family!
This was so easy and delicious! I’m trying to add in extra veggies where I can as I struggle to make time for lunch in my busy workday. This has a healthy dose of protein, fiber, and all the good veggies.
I added in an additional yellow bell pepper and did slightly more cauliflower rice and it still came out perfect. I also used leftover rotisserie chicken but will likely make it again with my own chicken thighs.
Thank you!!!
SO glad you loved it, Charlotte! And you are a lady after my own heart with getting the extra veggies in! It can be so hard to get “enough” in during a busy day, so upping the volume in meals is my move! So glad this soup landed for you the way it did for me. Thanks for coming back and sharing!
We hate to sound dramatic but your recipes have changed our life. We absolutely love every one of them and they make us feel so healthy. I made the soup tonight and it was another hit. I also did a second round of your egg roll pork meatballs to freeze, and now I’m off doing the zucchini strawberry muffins for breakfast this week. Thank you so much for not only delicious but nutritious recipes.
I hate to sound dramatic, but your comment made me tear up a little. This website is my job, but I also wanted it to truly be something that HELPED people in a very real way. I am so glad veggie-loading has changed your life the way it has changed mine (it came about because WE needed help eating more veggies too!). Thank you for trusting me when cooking for your family. And thank you for making my morning brighter.
My new go-to white chicken chili recipe!! Each day that I brought it for lunch to work my coworkers smelled it from afar and begged for the recipe (which I gladly sent, of course). Thanks for an amazing recipe!
Oh I am so glad you loved it so much!!!
This is a good white chicken chili recipe. I didn’t add the riced cauliflower because I thought it would affect the texture. My mother said she wanted the cauliflower, so I added 1 cup of the riced cauliflower before we had it the 2nd time. The riced cauliflower in it was just fine. It made it thicker. I really like that you can add extra veggies but not sacrifice the expected flavor and texture.
Oh I am so glad you tried some with the cauliflower! Adding veggies while not messing with the joy of a recipe is my goal with everything I put out!
