Turkey Skillet Lasagna (with added veggies!)
This Veggie-Loaded Turkey Skillet Lasagna is your new go-to comfort weeknight dinner. It’s packed with 4 cups of added veggies (grated zucchini, carrot, and onion), full of protein from lean ground turkey, and loaded with flavor from your favorite jarred tomato sauce and simple seasonings. Finished with ricotta, mozzarella, and Parm for those classic lasagna flavors (just no fussy layers). And it’s ready in 40 minutes…start to finish.

You know when you’re craving lasagna but also… it’s a Tuesday and you have zero interest in playing layering Tetris or waiting an hour for dinner to bake? Yeah. Same.
That’s where this Veggie-Loaded Turkey Skillet Lasagna came from. My own cravings on a Tuesday night after working a full day, taxi-momming my kid all around and not getting home to start dinner until it was dark. It’s all the cozy lasagna energy… just far less of the effort. It was totally inspired by Turkey Butternut Squash White Skillet Lasagna (that I just loooovvvveeee) but this version leans more into that classic, red sauce, cheesy, traditional lasagna flavor. Except way easier …and veggie-loaded (because I am me and that’s why you are here).
It’s cozy, hearty, veggie-loaded magic that scratches that lasagna itch without wrecking your kitchen…or taking over your evening.
Let’s make dinner together. Just you and me….

Turkey Skillet Lasagna (with added veggies!)
Ingredients
- ½ pound penne or rigatoni pasta, Use gluten-free if needed. I find chickpea pasta or brown rice pasta works best.
- ½ cup reserved pasta water
- 1 tablespoon olive oil
- 1 small onion, finely diced. About 1 cup.
- 1 medium zucchini, grated. About 1½ cups loose packed after grating. Do not squeeze out the moisture.
- 1 large carrot, peeled and grated. About 1½ cups
- 1 pound ground turkey, I used 93%
- ¾ teaspoon kosher salt, divided
- ½ teaspoon ground black pepper
- 2 teaspoons Italian seasoning
- 4 cloves garlic, minced
- ½ tablespoon Worcestershire sauce, sub with coconut aminos for gluten-free
- 32 ounces jarred pasta sauce , I like Rao's
- ¾ cup shredded mozzarella cheese, divided
- ¼ cup grated Parmesan cheese
- ¾ cup part-skim ricotta cheese
- minced fresh basil, optional garnish
Instructions
- Cook pasta in a pot of salted boiling water according to package instructions until al dente. Once done cooking, reserve 1/2 cup of the pasta water, drain and set aside.
- While the pasta cooks, heat the oil in a large skillet over medium heat. Once hot, add the onions, grated zucchini, and grated carrots. Season with ½ teaspoon of salt and cook for about 5 minutes or until the veggies start to soften.
- Push the veggies to one side and add the ground turkey into the empty side of the skillet. Add the remaining ¼ teaspoon salt, pepper, and Italian seasoning. Cook, breaking apart the meat with a large wooden spoon, until almost cooked. About 5 minutes.
- Once the meat is almost cooked through, add the garlic and Worcestershire sauce and stir the meat and veggies together. Let the mixture cook for another 4 minutes or until the turkey is completely cooked through.
- Add the pasta sauce, ½ cup pasta water and cooked pasta into the skillet. Stir everything together and let it simmer for 3 to 5 minutes to let the pasta soak up some of the flavors.
- Add ½ cup of the mozzarella and the grated Parmesan cheese to the skillet and stir together until the cheeses are melted and mixed in.
- Remove the skillet from heat and dollop the ricotta over the hot lasagna and gently mix it in. Top with the remaining ¼ cup mozzarella cheese. Cover the top of the pan to melt the cheese or place under the broiler until the cheese is bubbling and brown.
- Serve and enjoy garnished with extra Parmesan or chopped fresh basil.

I just made this tonight and it was incredible. Everyone loved it- even my very picky veggie eater! Will definitely make this again!
Yessss! I always aim to win over those selective eaters! So glad it was such a hit!
I made this for dinner last night and it was so good! Nourishing and it was nice to know we were getting some veggies too! It is quick, easy and delish! Thank you for another great recipe!
Aw yay! I’m SO glad you loved it too!
Made this for dinner tonight and it was a hit! Thank you for another delicious recipe Taesha!
Yay! So glad to hear that, Roxanne! Thanks for trusting me when cooking for you and your crew!
This was sooo yummy!!! Definitely adding to the rotation. So cozy and hearty.
Yay! I am so glad you loved it!
Whole family loved this! The kids were like skeptical- then tasted it and loved it.
That skeptical-then-loved moment is the best (especially with kids!) So glad it was a hit with the whole family, Jamie!
If I use zucchini that I have previously grated and frozen, would I use about 3/4 cup instead of 1 1/2 cups? Thank you.
I’d say more like a cup since it shrinks down quite a bit during the freezing/thawing process!
This was easy and delicious, and my kids loved it. I used ground chicken as it’s what I had on hand. Next time I might throw in some chopped spinach just to up the veg factor even more!
We were totally dinner twins last night, Sara! We had it too and while I was making it, I thought “now why didn’t I add spinach to this recipe again?” and I honestly can’t recall other than I thought people might need a break from it (I do tend to throw it into allllll my recipes 🙃). So glad you all loved it and thanks for coming back and leaving a review!
This is delicious! I made this for dinner and everyone ate it, no complaints, no separate “meals”. My 3 year old loved it so much that she asked for seconds, plus wanted it for lunch the next day – almost unheard of in the toddler world! I made it almost as written, but threw some chopped up mushrooms in with the other veggies at the beginning. So so good!
Yesssss to the extra veggies! And WOOHOOOO for it being so wildly toddler approved!
My husband said this was “the best pasta dish” I’ve ever made! (And we’ve been married 16 years!) Even our “cautious eater” snagged some after he saw his siblings loving it and added it to his plain pasta I reserved. I didn’t tell anyone, but I had forgotten to get ricotta cheese and only had whole milk cottage cheese, so I whipped it in the blender before adding on top and just didn’t say anything and there were still rave reviews! I thought it was delicious, too!
OOhhhhh Erin! This is magic. 1) that the whole family (including your cautious one) loved this! Yay. Gosh, I always hope for that when I put recipes intot he world but its so nice to hear that they are working for you all! 2) the whipped cottage cheese sub for ricotta!? Brilliant. Trying that next time!
This was so good! It looked like a lot of shredded veggies at first (which I love, but wasn’t sure what my husband would think!) but they pretty much disappear once the sauce and cheese are added. He even had leftovers for lunch today. 🙂
Thank you for sharing, will definitely be making this again!
Yessssss! I’m so glad it was a success!
I have two neurodivergent tweens who are both super picky eaters in their own unique ways (insert melting face emoji here), plus a husband whose taste preferences differ quite a bit from mine. We all loved this recipe, and my 9-year-old even came back for seconds! I skipped the ricotta because none of us like it much, but followed the rest pretty closely. Thanks for another great recipe, Taesha!
Ah ! This made me smile in the biggest of ways, Laura! I am so glad it was such a win for your family!
This was a hit for the whole family, even my two toddlers! I loved how filling it was while only having 8oz of pasta for the whole recipe. Will definitely add to the regular rotation!
Toddler approval is truly the best compliment! I’m so glad it worked well for your whole family. Thanks for coming back and leaving a review, Ellen!
chock full of veggies and, oh, so comforting! the family all enjoyed it and I added another pound of turkey to have it prepped seperately for the week. I did wonder if the noodles could be cooked after meat like in the healthy hamburger helper, but maybe this recipe contains less liquid?
a perfect addition to my meal planning! thank you!
That sounds like such a great way to prep ahead … extra turkey is always a win. And yes, you’re spot on: there’s less liquid in this one, which is why the noodles are handled differently than the hamburger helper. I’m so glad it was a comforting hit for your family. Thanks for sharing!
Made this with an extra zucchini and more carrots since they basically disappear (in the best way). Taste was delicious and no one would know it was so veggie packed. Would add spinach next time too (if I remember…!). Delicious and easy recipe, thanks!!
Extra veggies is always the way to go, IMO! So I am glad you got adventurous and did that and it paid off! So glad you loved it, Cara! Thanks for ocming back and sharing!
Coming back to say how much we still love this recipe!! I have been making it and freezing half and we are eating it weekly. Such an easy YUM and healthy dinner. We don’t eat foods over and over… except this, so that says a TON. Thank you so much!!
Wow! Thank you, Cara! Thats so awesome💚
This was super yummy and cozy! Love the flavors and all the veggies in here. I think next time I’d either up the amount of pasta or reduce the sauce. The proportions felt a bit off for me, but could be a personal preference!
I’m really glad you loved the flavors and all the veggies. And yes …. the pasta-to-sauce ratio is definitely something that can come down to personal preference (I love a really saucy pasta), so tweaking it the way you mentioned sounds like the perfect way to make it your own!
So delish! My son and his friend both had seconds (and my husband and I may have had seconds…or thirds haha!) I should have made a double batch!
Thats awesome, Michelle! I am so glad it was such a smashing success over there!
I made this for the first time last night and it was quick, easy and so delicious!
Yay! I am so glad you enjoyed it as much as we do!
Made this tonight – absolutely delicious! After dinner, my husband walked around the kitchen saying, “so good, so good!” 😊
Oh man….I love that review. So good that the memory sticks with you after dinner. Thanks so much for coming back and sharing, Leslie. So glad it was such a hit over there.
