Well, that was crazy.

That is literally what the new years card I sent out to my family and friends said, because it basically summed up how I felt every single day of 2020.

Constantly pivoting. Shifting plans and expectations. Giving myself (and others) grace. And embracing the constant changes of the year.

But here we are, at the end of 2020. With many lessons and new perspectives under our belts for 2021. I can’t say it was all easy. I cried and laughed. I learned how strong I am….and resilient my family can be. We got creative to make the best of the situations we found ourselves in. And I learned about what is simply NOT important….and let that go without a second thought.

No matter how hard the day/week/month, I have felt profound gratitude to be able to work through it all. And a job I love and find incredible purpose in, to boot!

2020 was the year that so many of you found this incredible community and started veggie-loading your meals, mindset, and your family’s lives. And I have some incredible recipes and posts planned for 2021, but for now….let’s take a minute to reflect on your top 10 reader favorite veggie-loaded recipes of 2020.

Healthy Chocolate Muffins (with veggies!)

5 stars

WOW! Ok this is definitely a keeper! I added a few sprinkles on top to look pretty and I don’t even feel guilty 😅 These are delicious!

Blueberry Spinach Smoothie

5 stars

Really delicious. My son has been very anti-vegetables lately but he loved this (he helped put the spinach in the blender) but really enjoyed this. It will be a regular this summer. Thank you!

Fudgy Beet Gluten Free Brownies (vegan)

5 stars

My kids and I loved this recipe! The texture is so great and the beets add such a depth of flavor (without tasting a ton like beets). Will definitely be making these again!

Zucchini and Corn Fritters

5 stars

Well. I’m addicted. Oh and so is my 10 month old. I get yelled at for offering her oatmeal instead of fritter at breakfast today.
By the way these are easy enough to make that I did it while feeding baby and enjoying my morning tea.

Kid-Friendly Vegan Spinach Muffins

5 stars

These muffins are SO so so good! I’ve made them a few times already switching up applesauce and bananas and also eggs and flax eggs. They are literally foolproof and turn out great no matter what! I love your spinach blender muffins but these are truly next level! Thank you so much for all your amazing recipes!

Zucchini Blueberry Baked Oatmeal

5 stars

Absolutely delicious! My kids devoured their first helping and asked for a second – a sure sign that this will become part of our regular rotation. The Natural Nurturer does it again! 🙌🏻🙌🏻🙌🏻
