Well, that was crazy.
That is literally what the new years card I sent out to my family and friends said, because it basically summed up how I felt every single day of 2020.

Constantly pivoting. Shifting plans and expectations. Giving myself (and others) grace. And embracing the constant changes of the year.
But here we are, at the end of 2020. With many lessons and new perspectives under our belts for 2021. I can’t say it was all easy. I cried and laughed. I learned how strong I am….and resilient my family can be. We got creative to make the best of the situations we found ourselves in. And I learned about what is simply NOT important….and let that go without a second thought.
No matter how hard the day/week/month, I have felt profound gratitude to be able to work through it all. And a job I love and find incredible purpose in, to boot!

Kid-Friendly Pink Beet Pancakes
These pancakes are so yummy! I couldn’t make them fast enough. My two and four year old loved them. These pancakes taste like cake 😋 they were a hit! I also had enough left for the kids lunch tomorrow. 🎉🙏🏻❤️

These muffins are SO so so good! I’ve made them a few times already switching up applesauce and bananas and also eggs and flax eggs. They are literally foolproof and turn out great no matter what!
