The world of recipe development
When I was a brand spankin’ new blogger some 3 (or is it 4…?) years ago, I was kind of still finding my footing in the world of recipe development. I made a lot of recipes that I would prefer to just forget about and I quite honestly cringe a bit when I see that someone has visited a “newbie recipe”.
Like all new things in life, blogging and recipe development was super duper hard before it was easy.
Actually, it still isn’t easy. But I love it. And I love that I can help you guys. So I keep putting one foot in front of the other and creating more recipes.
And while I have many recipes from that oh-so green season of blogging that were total flops, I do have a few that were pretty stinking good and that I continue to make. My Orange Walnut Scones being one of them! They are both grain-free, vegan and egg-free and are really quite yummy.
That recipe for sure has some hardcore TNN fans, and while I do love those little scones….I must admit that they remind me a bit more of a breakfast cookie than a scone.
“Sconey” recipe…
So, when I eyeballed the mountains and mountains of freshly picked oranges at my farmer’s market the other weekend, I became inspired to try my hand again at making that delicious scone recipe a bit more….sconey (that’s totally a word, guys).
And guys, the outcome was totally worth the remake!

Scrumptious Paleo Orange Walnut Scones
Ingredients
- 3/4 cup coconut flour
- 1/4 cup tapioca flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/3 cup coconut sugar
- 1/4 cup coconut oil, chilled
- 1/3 cup almond or coconut milk
- 1 cup walnuts, roughly chopped
- 1 teaspoon vanilla extract
- 1 large orange zest
- 4 tablespoons fresh orange juice
- 2 large eggs
Instructions
- In a medium bowl, combine coconut flour, tapioca flour, baking soda, salt and coconut sugar. Mix until everything is incorporated.
- Add chilled coconut oil to the flour mixture. Using a fork, cut the coconut oil in until the mixture is crumbly.
- In a small bowl, combine eggs, milk, vanilla and orange zest. Whisk together until well blended.
- Pour the contents of the small bowl into the flour mixture. Carefully mix to combine until the batter has an even consistency.
- Add orange juice and walnuts to the scone batter, stirring again to work the flavor in. Let batter sit for a few minutes to allow the coconut flour to absorb liquids.
- Scoop the batter onto a baking sheet lined with parchment paper or a silicone baking mat. Using your hands, form the batter into a circle, flattening it to be between 1/2″ and 3/4″ thick.
- Using a knife or bench knife, slice the circle into 8 wedges.
- Bake the scones for 20 to 23 minutes in a 375, or until they’re slightly golden brown.
- Remove the scones from the oven, and cool for about 10 minutes.
- When the scones are completely cool, put them in an air tight container and store in the fridge for up to 4 days.
It’s been a while since I made scones at home!
I went to make the recipe but the amount of eggs needed is missing from the ingredients
Thanks for catching that! The eggs must have been accidentally deleted during a recent update. I’ve fixed it now but these scones call for 2 eggs.
