If I had to pick a favorite spice, it would probably be turmeric. It’s a truly magical ingredient that goes beyond just how it tastes. Beautiful to look at with it’s rich and stunning golden color and delicious to eat with it’s warm earthy flavor, turmeric is an ancient healing root that has been used for its anti-inflammatory properties for thousands of years. It is a spice that many naturalists and health gurus advocate for people to have more of in their diet (including me!). These Golden Sweet Potato & Coconut Macaroons are an awesome way to get this magical spice into your family’s bodies!

Golden Sweet Potato & Coconut Macaroons

Golden Sweet Potato & Coconut Macaroons are loaded with one of nature’s best anti-inflammatories, turmeric, and are made from other incredibly nourishing real food ingredients! These golden beauties are as easy on the tastebuds as they are on the eyes!
Ingredients
  • 3 cups shredded coconut
  • 1/3 cup baked and mashed sweet potato
  • 3/4 teaspoon Daily Turmeric Tonic
  • 3 tablespoons honey or maple syrup
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • pinch of sea salt
  • 1/2 cup high quality chocolate chips
  • 1/2 tablespoon coconut oil
Instructions
Preheat oven to 325℉ and line a large baking sheet with a silicone baking mat or parchment paper. Set aside.Combine shredded coconut, sweet potato, Daily Turmeric Tonic, in a high-speed blender or food processor. Process on high speed, scraping down the sides as needed. Continue blending and scraping down the sides until mixture is very fine.Add honey/maple syrup, egg, vanilla and sea salt to the coconut/turmeric mixture. Process again until everything is well combined.Using a tablespoon or small cookie scoop, portion out mixture and firmly pack it into a ball with your hands. Arrange on the lined baking sheet.Bake 20-25 minutes or until dry to the touch.Remove the macaroons from the oven and allow them to slightly cool while you make the chocolate drizzle.Combine chocolate and coconut oil in a double boiler and melt over medium heat, stirring frequently to prevent burning. Alternatively, you can melt the chocolate in microwave in 30 second increments, stirring in between heating cycles.Use spoon to drizzle chocolate over the top of each macaroon. Chill in refrigerator or freezer to allow chocolate to set for about 10 minutes.Remove from baking sheet and remove access chocolate (if desired). Store in an air-tight container in the fridge for up to a week!
