Paleo Apple Cinnamon Muffins
These Paleo Apple Cinnamon Muffins are not only delicious, but easy to make! The perfect healthy muffin, these are naturally sweetened, gluten free and dairy-free!

Sweetened by nature and serving up some serious healthy fat and protein, these muffins are the perfect thing to start the day off right or to keep on hand for a healthy snack! Naturally Paleo, gluten free and dairy-free!
The muffin queen
One thing I never dreamed (in a million years) that I would be called is The Muffin Queen.
I mean, who would think they would earn that kind of title? Its oddly specific. But it is something many people on the internet refer to me as. The Muffin Queen.
And I kinda get it. I do make many muffins. I do eat many muffins. And I have a special place in my heart for anything that can be cooked in a muffin tin (check out my Veggie-Loaded Mini Meatloaves). Its just one of those quirky things that I rock with pride. The Muffin Queen.
And here I am, baking in a muffin tin again…but this time with a fall flare – apple cinnamon muffins recipe!
Does anything say fall quite like the combination of apples and cinnamon? I think not! Just the smell of them together sends me back to my childhood in Maine, apple picking with my family and munching on fresh apple cider donuts.
It’s a heavenly combination that is perfect for fall, but also a year round favorite of many!
And making this warm flavor combo into a delicious and healthy gluten free muffin couldn’t be easier with these Apple Cinnamon Almond Butter Muffins!
These muffins are based off my oh-so popular and loved Almond Butter Blueberry Zucchini Muffins…but with a fall twist! Just as magically spongy as the original recipe but with the warm flavors of autumn…you are going to fall head over heels for this ridiculously simple recipe!

- Is almond butter not your jam? Thats cool, you can make these with creamy natural peanut butter too if Paleo isn’t a priorly!
- Want to add a little veggie goodness to these apple cinnamon muffins? Reduce the apples to 3/4 cup and add 1/2 cup of grated carrots to the batter! So yum!
- Adjust the sweetness to your personal preference. Need these a little sweeter? Feel free to bump up the honey/syrup to 1/3 of a cup. Do you want to keep sugar to a minimum? Skip the honey/syrup in this recipe and let the apples do all the sweetening! They will be mildly sweet, have a lovely nutty flavor from the almond butter.

Paleo Apple Cinnamon Muffins
Ingredients
- 1 cup creamy almond butter
- 1/4 cup honey or maple syrup
- 3 eggs
- 1 teaspoon pure vanilla extract
- 1/2 tablespoon cinnamon
- 1/2 teaspoon baking soda
- 1 cup diced apples, divided
Instructions
- Preheat your oven to 350℉ and line a muffin tin with 9 liners.
- In a medium bowl, combine almond butter, honey/maple syrup, eggs, vanilla, cinnamon, and baking soda. Mix with a spoon until well blended the batter is smooth.
- Add 3/4 cup of apples. Fold in until everything is well incorporated.
- Portion out the batter between the 9 prepared muffin holes. Top the muffins with the remaining apples.
- Bake for 20-25 minutes or until the toothpick inserted into the middle of a muffin comes out clean.
- Allow muffins to cool 15 minutes before enjoying! Store cooled leftovers in fridge for up to 5 days….not that they will last that long, as they are sure to be gobbled up before then!

Rats! I don’t have muffin liners, we just usual coat the muffin tin in coconut oil, is that okay? Recipe sounds great!!!

Can I use Sunbutter instead of the Almond butter?
You can, however a quick heads up. The sunbutter reacts with the baking soda in this recipe and will turn the muffins green. They will totally taste great and be fine….but green.

I am a nanny and was wondering if there is an option for making it nut free but also no seeds ( due to allergies at the preschool, not the children I care for)so sunbutter & almond butter/peanut are out? the toddler loves these & green smoothie are his FAVORITE!

Unfortunately, I have not had success making my nut butter based muffin recipes egg-free. Flax eggs did not work for me.

Was highly impressed with these!! Did mostly almond butter with some peanut butter to top off (since i didnt have enough) and did half maple syrup, half honey.. SO good! Greased with coconut oil. They held together so well! Great texture, divine with a spread of plant-butter! Thanks for this recipe! Keeping this one around
