Refreshing Strawberry + Basil Ice Pops are delicious and nourishing frozen pops made with beautiful ingredients in the comfort of your own kitchen.

Summer, in all her wonderful glory, is here and so is her lovely (yet sometimes stifling) heat. And when it’s so hot that even the lightest of sun dresses feels like a fur-lined parka, the only thing you want to do is to lay in the shade with a hammock, a good book, and something tasty and cold.

Skip the ice cream sandwiches and froyo and just reach for an ice pop. It’s what you actually want…I swear.

Homemade ice pops, after all, are about as easy as healthy home cooking gets. So let’s just agree to make this summer tastier, healthier, and way more comfortable by breaking out your popsicle molds and making these wildly tasty, to-the-moon-and-back refreshing strawberry basil ice ops.

The unofficial flavor of summer

Fresh, sun ripened strawberries are pretty much the unofficial flavor of summer. There is nothing quite like popping a strawberry freshly plucked from the plant into your mouth….. still warm from the sun. If my childhood in Maine could have a flavor, I think that would be it.

The seasonal strawberries of summer just seem to have a magical flavor that makes you want to put them into everything: salads, water, jams, ice pops. Yes, definitely ice pops. But not the neon colored ones with artificial everything from the grocery store.

Simple nourishing ice pops made with wholesome ingredients that capture the taste of summer in a sophisticated way.

Combined with the lovely mild flavor of basil, these refreshing strawberry basil pops will be your healthy saving grace when the dog days of summer have you lazing in a hammock…or at least wishing you were.

Refreshing Strawberry + Basil Ice Pops

Refreshing Strawberry + Basil Ice Pops are delicious and nourishing frozen pops made with beautiful ingredients in the comfort of your own kitchen.

Ingredients  

  • 2 cups sliced strawberries
  • 7 large basil leaves
  • 1/4 cup water

Instructions

  • Combine all of the ingredients in a blender and pulse until mixture has a smooth and even consistency.
  • Portion out evenly between 6 pop molds and insert a popsicle stick into each mold. 
  • Set in freezer for 4-6 hours or until the pops have hardened completely.
  • Enjoy with feet up and a gentle breeze (optional)
