Orange Spinach Salad with Avocado

I’m kind of in love with citrus season this year…

I can’t help it guys, the oranges, limes, lemons, and mandarins call to me. I find myself putting citrus on an embarrassing amount of what I eat (and drink) during the course of the day. But, hey, I’m sure there are worse things out there. Right? Humor me …say yes and keep reading.

This salad is perfect for helping you chase away any winter blues that may be looming over you. It is bright, light, and refreshing. You will feel like you are sitting by a pool while you are eating this plate of sunshine and it is totally satisfying to the gut and taste buds alike. 

 If you find yourself needing a little extra help brushing off the winter doom and gloom, add some goat cheese or feta. Oh yeah. That’s what I’m talking about! 

2 medium oranges, peeled and sliced

4 cups fresh spinach, roughly chopped

1 ripe avocado, pitted and diced

¼ cup fresh basil leaves, shredded

½ tablespoon olive oil

1 ½ teaspoons sesame seeds

½ tablespoon balsamic vinegar

1 small clove garlic, minced

Salt & pepper to taste

  1. In a large bowl, combine oranges slices, spinach, avocado, and basil. 
  2. In a small bowl, whisk together olive oil, vinegar, garlic, sesame seeds, salt, and pepper.
  3. Pour dressing over salad and gently toss.
  4. Serve as is or add crumbled goat or feta cheese.
