Warning: You’re Gonna Want to Put This on Everything

As soon as the weather starts warming up, I go full snack mode. Give me all the easy lunches, no-fuss dinners, and honestly, any excuse to load up on raw veggies… as long as there’s a dip involved to make them way more exciting. That’s where this roasted red pepper feta dip comes in—creamy, bold, a little tangy, and basically begging to be piled onto everything.

I whipped this up using a whole jar of roasted red peppers, feta, ricotta, and a few pantry staples—no cooking, no drama. Just toss it all in the blender and go. The result? A ridiculously good spread that I’ve been putting on snack plates, sandwiches, wraps, and yep… even stirred into pasta when I didn’t feel like making a “real” dinner.

This one’s a total keeper. Snack it, spread it, dollop it, or straight-up eat it with a spoon (no judgment). However you get it into your life, you’re gonna be so glad you did.

Okay, let’s do this. You and me…

Ingredients

  • ½ cup ricotta
  • 5 ounces feta cheese
  • ¾ cup jarred roasted red peppers, drained
  • ½ teaspoon smoked paprika
  • 1 Tablespoon lemon juice, or apple cider vinegar
  • ½ teaspoon garlic powder
