30-Minute Paleo Chocolate Supergreens Granola

I’m not sure that there is a child from the 80’s that didn’t beg their parents to let them have chocolate cereal for breakfast.

Cocoa Puffs. Cocoa Pebbles. Cocoa Krispies. You name it. If it promised chocolate for breakfast, I wanted it.

I’m sure my parents dreaded taking me to the grocery store when I was a kid, as I undoubtedly begged and pleaded for the treat of chocolate cereal for breakfast. And as far as I can recall, my parents never gave into the tears shed over the uber-processed and nutritionally bereft chocolate cereal (props, Mom and Dad). And I honestly hadn’t thought about my longing for chocolate cereal in ages….until a few weeks ago.

So, there I was one Tuesday morning in the kitchen. Alice had requested my 30-Minute Grain Free Granola with a splash of almond milk for breakfast and we were working together to get it into the oven quickly so we could get ready for work and school while it cooked.  As I reached into the cupboard for my chia seeds, my eyes fell on my bag of Paleovalley Supergreens.

“Ohhhhh those would be a nice addition to the granola! A little secret kick of super food and veggies…but I’d probably need to make it chocolate to mask the green color,” I thought.

And then it all came flooding back to me. My longing for chocolate cereal as a kid. And while I, as an adult, am very capable of going out and buying myself a box of Cocoa Pebbles, I wasn’t about to do that. Because now as a grown adult, I know why my parents said “no” to those cereals week after week. Because they weren’t actually a breakfast….just a sugary treat in the form of a cereal.

But, maybe…I could make a chocolate cereal that would actually pass for a solid, nutrient-dense breakfast. Just maybe….

 I kept thinking about it. Paleo Chocolate Supergreens Granola….an easy, make-ahead breakfast that offers all the convenience of boxed breakfast cereals, but that is loaded with healthy fat, fiber, supergreens and (best of all) CHOCOLATE.  And, let’s be real….who doesn’t want an excuse to eat chocolate for breakfast?!

30-Minute Paleo Chocolate Supergreens Granola

This paleo-twist on traditional granola is a healthy ode to the chocolate cereals we all longed for in childhood…..but loaded with protein, fiber and even a dose of hidden veggies! Try it with some coconut yogurt and a few berries berries for an easy breakfast or snack when you don’t feel like cooking and thank me later!
Ingredients
  • 1 cup chopped raw cashews
  • 1 cup chopped raw almonds
  • 1 cup chopped raw pecans
  • 1/3 cup cacao or unsweetened cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 tablespoons coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons chia seeds
  • 1 tablespoon Paleovalley Supergreens powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 tablespoons coconut sugar
Instructions
Preheat your oven to 325F and line two large baking sheets with parchment paper or a silicone baking mat. Set aside.In a large bowl, combine nuts, chia seeds, Paleovalley Supergreens powder, sea salt, cinnamon, and coconut sugar. Mix a few times to combine. Set aside.Put a small saucepan on medium heat and combine cacao/cocoa powder, honey/maple syrup, vanilla and coconut oil. Whisk until the oil is melted and the mixture has a smooth consistency without lumps.Pour over the nut mixture in the large bowl. Toss several times with a spoon until all of the nuts are evenly coated in chocolate. Divide the granola evenly between the two lined baking sheets and spread it out, flattening the mixture onto the baking sheets.Bake for 10 minutes. Stir. Bake another 10 minutes or until the nuts are aromatic. The granola may still seem soft. Thats normal and it will crisp up as it cools.Cool on baking sheet complete before transferring the granola to an air-tight container. Store at room temperature for up to 2 weeks.

    What’s the value of Paleovalley Supergreens powder? Can it be omitted?

      Yes, you can totally omit it. It just adds extra nutrients to the granola.
