Tropical Carrot Popsicles

These tropical carrot popsicles are easy to make and a delicious way to get veggies in during those hot summer months.

  • 1 can coconut milk or 3/4 cup plain greek yogurt
  • 1 cup diced carrot
  • 1 medium banana ripe
  • 1/2 cup mango chunks
  • 1/2 cup pineapple chunks
  • honey to taste, optional


  • Add carrots and coconut milk to blender and pulse until carrot is totally pureed.
  • Add remaining ingredients and blend until very smooth. Taste and add honey if desired.
  • Portion mixture out between popsicle molds. Insert popsicle sticks.
  • Freeze for about 4 hours or until solid. Enjoy.
