Tropical Carrot Popsicles
These tropical carrot popsicles are easy to make and a delicious way to get veggies in during those hot summer months.

- 1 can coconut milk or 3/4 cup plain greek yogurt
- 1 cup diced carrot
- 1 medium banana ripe
- 1/2 cup mango chunks
- 1/2 cup pineapple chunks
- honey to taste, optional
Add carrots and coconut milk to blender and pulse until carrot is totally pureed.
Add remaining ingredients and blend until very smooth. Taste and add honey if desired.
Portion mixture out between popsicle molds. Insert popsicle sticks.
Freeze for about 4 hours or until solid. Enjoy.
