Easy Smoked Salmon Salad with Quick Lemon Dijon Dressing
This Easy Smoked Salmon Salad is colorful, bursting with flavor and colors, and is the perfect no-cook side to any meal during the warmer months. The quick lemon dijon dressing brings this salad next level and is always a crowd pleaser!
Servings: 2 servings
- 1 medium avocado pitted, peeled, and diced
- 4 ounces smoked salmon if needing Whole30, make sure if doesn't have added sugar
- 2 Persian cucumbers sliced or diced
- 4 cups loosely packed baby spinach
- 3/4 cup fresh blueberries
In a large bowl or on a large platter, combine the salad ingredients. You can gently toss to mix or arrange in whatever manner you like.
In a small bowl or large measuring cup (this makes for easy pouring), combine the dressing ingredients. Use a fork or small, whisk the ingredients together.
Pour dressing over salad right before serving and enjoy immediately.
