Coconut Lime Popsicles

Put the lime in the coconut and....make them into popsicles! No? Not how the song goes? Oh well. But now that we are talking about it, these coconut lime popsicles are a creamy and refreshing treat! Minimal ingredients and Paleo + vegan.

Ingredients

  • 14 ounce canned coconut milk I used full fat for the creamiest
  • 1/4 cup lime juice
  • 1/4 cup shredded coconut
  • 1/4 cup maple syrup, honey, or coconut sugar or to taste
  • 1 teaspoon lime zest

Instructions

  • Throw everything into a blender. Blend until mixture is smooth and has an even consistently.
  • Pour into Popsicle molds. Freeze for 4-6 hours or until set before enjoying.
