Watermelon Cucumber Popsicles
These Watermelon Popsicles are made with just 3 good-for-you ingredients and are extra refreshing with the addition of cucumber! Prepared in minutes with no added sugar, these healthy popsicles are vegan, Paleo, and the perfect cold treat for kids and adults.

- 3 cups diced seedless watermelon fresh or frozen
- 1 cup diced English cucumber peeled. See above for suggestions using other cucumbers.
- 1-2 tablespoons lime or lemon juice or to taste
Add the cucumber, watermelon, and lime/lemon juice to a blender. Blend until very smooth and no bits of cucumber remain.
Skim off any foam the rises to the top of your blender.
Pour blended juice in popsicle mold and freeze until solid, at least 6 hours or overnight. Run popsicle mold under hot water for a few seconds to make the popsicles easier to remove.
