Equipment

  • Blender
  • popsicle mold

Ingredients

  • 3 cups diced seedless watermelon fresh or slightly thawed frozen (just enough to have some juice to help blending)
  • 1 cup diced English cucumber peeled. See above for suggestions using other cucumbers.
  • 1-2 tablespoons lime or lemon juice or to taste

Instructions

  • Add the cucumber, watermelon, and lime/lemon juice to a blender. Blend until very smooth and no bits of cucumber remain.
  • Skim off any foam the rises to the top of your blender.
  • Pour blended juice in popsicle mold and freeze until solid, at least 6 hours or overnight. Run popsicle mold under hot water for a few seconds to make the popsicles easier to remove.
  • Enjoy!
