Broccoli was one of the first vegetables that made me see the power and possibility behind the veggie-loaded approach. The nutrient dense green plant is a staple in our house and many of my recipes. And truly can be kid (or veg-iffy adult) friendly!
Broccoli is amazing steamed, roasted, and tossed into all kinds of recipes. Keep a bag of frozen broccoli in your freezer to toss in a quick stir fry or casserole. Or chop it up to add to burgers, meatballs, or even savory muffins. Or you can even make tots out of broccoli!
