Creamy Southwest Chicken Salad with Black Beans
This Southwest Chicken Salad is loaded with black beans, canned corn, jarred roasted peppers and a homemade creamy, zesty lime dressing — perfect for a healthy lunch or meal prep option that’s ready in about 15 minutes…start to finish.

I’ve said this before, but I’ll say it again (especially in case this recipe is your first time finding me): a veggie-loaded chicken (or tuna) salad absolutely saves me during the week. Left to my own devices, I will fully forget to feed myself, grab a protein bar at 2pm while rushing out the door for school pickup, and call it lunch. And I know I’m not the only one (I see a few of you nodding right now).
Having something like this Southwest chicken salad ready in the fridge makes it so much easier to nourish myself the same way I try to nourish my family. It’s filling, balanced, and actually satisfying — not just “whatever was closest.” If you’ve made my Creamy Edamame Chicken Salad, this will feel like a familiar rhythm with a totally different flavor vibe. Same reliable, protein-forward base. Same fridge-friendly meal prep magic. Same veggie-loaded vibe and goodness. Just a bold, Southwest twist to keep things interesting.
Now, let’s go make sure we actually remember to feed ourselves and feed ourselves well…
Let’s prep lunch together. Just you and me…

Creamy Southwest Chicken Salad with Black Beans
Ingredients
- ½ cup plain Greek yogurt
- 2-3 tablespoons mayo
- 2-2½ tablespoons fresh lime juice, about 1 small lime
- 1 teaspoon kosher salt, or to taste. You may need more if you are using unsalted beans and depending on how your chicken is seasoned.
- 1½ teaspoons chili powder
- 1 teaspoon dried parsley, or oregano
- ½ teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ground black pepper, to taste
- 3 cups cooked chicken breast, diced or shredded (rotisserie totally fine)
- 15 ounces canned low-sodium black beans, drained + rinsed and excess water shaken off or patted dry. (About 1½ cups)
- 14.75 ounce canned fire-roasted corn , drained + rinsed well and excess water shaken off or patted dry. (About 1½ cups)
- 1 cup jarred roasted red peppers, drained + rinsed and excess water shaken off or patted dry and diced small
- 3 green onions, thinly sliced
Instructions
- Combine the Greek yogurt, mayo, lime juice, chili powder, dried parsley, cumin, onion powder, paprika, garlic powder, salt and pepper in a large bowl. Whisk together until a smooth dressing is made.
- Add the cooked chicken, drained black beans, drained corn, diced roasted red peppers, and green onions to the bowl with the dressing.
- Toss until the chicken, beans, and veggies are well coated in the dressing. Taste and adjust seasonings and salt as needed.
- Enjoy immediately scooped up with chips or tucked into a pita, wrap or sandwich. Store leftovers in an airtight container in the fridge for up to 4 days.

What do you think about if I double the beans?
I think it is a great idea! You might need to increase the dressing by 1/2 to have enough to keep the creamy element and flavors.
Perfection, I added some diced gherkins to mine which went amazing with the sweeter beans and corn – I used to always walk past the rotisserie chickens, but i’ll buy 2/3 a week now because the cost is almost the same as a raw whole chicken…I’m taking those electricity savings!
I’m a dinner for breakfast kinda woman and the leftovers gave me a guilt-free start to the day. Otherwise, I serve with roasted sweet potato wedges, delish!
Yay! I love all of this, Ashlie 😄 The gherkins sound like such a good addition with the beans and corn (pickles aren’t my thing but I know MANY readers will love this idea).
Also fully support “dinner for breakfast” …leftovers like this are such a great way to start the day on a solid, balanced foot that is also easy to grab. Thanks so much for sharing!
This was a delicious lunch option for me on Weight Watchers for 1 point. I used non fat Greek yogurt and light mayo. I love the use of roasted peppers. I will use the dressing as a base for other meal options. I will definitely add this into my meal prep lunch options in the future.
Oh so glad you loved it so much, Jackie!!
So so delicious and easy. This will definitely be a staple in my household

This was SO good – making for the second time a week after the first! This southwest dressing is amazing. 👏 I crumbled tortilla chips on top to eat it all with a fork – big fan.
Yay! I love that you loved it so much, Hannah! 🥹 That southwest dressing really is a favorite around here too… and the tortilla chip move is genius. So trying that with my next batch!
This is such a great recipe. So easy to put together. I used a rotisserie chicken and I had everything else on hand. this is so flavorful and will be on repeat. Thank you!!

This is a delicious dinner with minimal effort. 10/10 Perfect for a summer dinner when it’s too hot to turn on the oven.
Yay! I am so glad you enjoyed it so much, Lisa!
Absolutely delicious! I made it vegetarian by leaving out the chicken and adding a can of cannellini beans 🙂 used a fresh red pepper since I had that but not jarred. Came out so delicious! Lunch for a few days! Thanks for another great recipe!
Oh genius! I love that so much and now need to try that!
Incredible! I didn’t have the roasted red pepper, lime, or the onions but it turned out perfect! I couldn’t stop eating it! Kids loved it too.
Oh yesssss! I am so excited to hear that, Tara!
Add fresh cilantro and it takes it to another level! Great recipe we love it!
