Meet my vegetable superhero pal, Oven Roasted Purple Cauliflower. It’s stunning to look at, easy to whip up for dinner (on even the craziest of nights), and heavenly on the taste buds. It’s okay, purple cauliflower can be your superhero pal too. I’m willing to share.
Putting joking and silliness aside for a moment, let’s just be honest with one another. Veggies can be a sore subject in a lot of households. With kids. With adults. Vegetables, while super duper awesome for us, often are the one food group that gets the cold shoulder from people of many ages. They are sometimes bitter and have a funky texture or appearance. Vegetables don’t always make loving them easy, but I promise that it is a relationship worth pursuing (and encouraging your stubborn little ones to embrace as well).
My secret weapon for making vegetables a little more “family friendly” is roasting. Ohhhhhhh, roasted vegetables are so amazing. The lovely caramelized edges. The al dente texture. The lovely flavor the cooking oils infuse into the vegetables. Heavenly. For real. I roast every damn veggie I can get my hands on (some more successfully than others). I highly promote introducing a new vegetable roasted to kiddos for the first time. It will absolutely be a more positive experience for them…but I’m also a bit biased.
But back to this stunning purple cauliflower.
It’s almost hard to believe that this amazing vegetable with such a vibrant color is, well…..legit. In fact, many people don’t know purple cauliflower even exists (it comes in green and orange too, by the way). But it does exist, given its rich color by nature instead of dyes cooked up in a lab. Purple cauliflower boasts many of the same nutrients that its more popular brother, White Cauliflower, are known for (high fiber and vitamin C), with a few extras on the side. However, the reason I am madly in love with purple cauliflower (especially for those resistant veggie eaters) is because it is so dang beautiful.
Seriously, we eat with our eyes first. Men. Women. Children. Even animals. If something doesn’t please the eye, it is likely to be less likely to be eaten. Why do you think restaurants and food bloggers (presently company included) go to so much effort to plate foods beautifully? Because it makes you want to eat it more!
So, let’s use this information to help our families embrace fabulously healthy foods more. Serve them pretty food that tastes amazing! The beautiful color of this purple cauliflower will help it get it into their mouths. The rich roasted flavor will keep them coming back for more!

- 1 head purple cauliflower, cut into florets and washed & dried
- 1 1/2 tablespoons avocado oil or melted coconut oil
- 1/4 teaspoon sea salt
- ground black pepper to taste
- Preheat your oven to 375 F. Line a large baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine all of the ingredients. Toss with a large spoon a few times to evenly coat the florets with the oil, salt and pepper.
- Evenly spread out the cauliflower onto the baking sheet in a single layer.
- Bake for 15 minutes. Remove from oven and turn the florets over. Return to oven a bake for 15 to 20 more minutes or until the ends of the florets start to turn a golden brown.
- Enjoy warm.
