These One-Skillet Sweet Potato & Kale with Eggs are all of the best parts of breakfast in one pan!

One-Skillet Meals
I love and adore a one-skillet meal! Especially at breakfast. Minimal prep before you’ve had that first cup of (much needed) coffee and next to no clean up when you’ve finished the meal.
Heck, you can even leave the one-skillet in the sink for the day and not have to worry about coming home to a sink full of breakfast dishes at then end of the day.
Yep, a one-skillet breakfast is the way to go and THIS is my breakfast of choice as of late.

Thanks for sharing! Just finishing this dish up now! Turned out amazing, and your recipe is much simpler than others I’ve seen that are similar. Perfect!
Goes great with a side of cornbread, for the hubby who is not so much on the healthy eating train… 😉
Thanks for the recipe. We really enjoyed it! I just think it needs some spices (rosemary, thyme, paprika) and onions to make it perfect. We’ll certainly make it again!
If I had to make a list of my favorite breakfast options, these fries with eggs would definitely make it!
