Doesn’t that title just sound like summer? I remember in college, my girlfriends and I would go out to lunch at this very small, rustic, and lovely tea house where they served lavender lemonade. I had never heard of it before then and have loved the flavor combination ever since. So when, one Saturday at the farmer’s market, I saw my favorite vendor was selling both fresh lemons and lavender, I knew I had to try my hand at turning my favorite summer refreshment even more refreshing.
1 small handful of fresh, rinsed lavender flowers
1/3 cup honey or maple syrup
2 cups boiling water for the infusion
1/2 cup freshly squeezed lemon juice
1 cup more of cold water
In a medium bowl, coat the lavender flowers with honey/maple syrup.
Pour the boiling water over the flower mixture and let it stand for 30 minutes
After the mixture has been infused, strain the flowers out by pouring the mixture through mesh strainer or a cheese cloth. Stir in lemon juice and the cup of cold water. Taste of tartness/sweetness. Pour into molds and freeze over night.
