“Do I smell apple pie cooking?” Alice asked, popping her head up from behind the book she was reading on the couch in her jammies.
The smell wafting out of my Instant Pot as Morning Glory Oatmeal cooked to perfection one Sunday caught Alice’s attention mid reading session.
“Nope, its oatmeal. But you’re right…it does smell like apple pie. Always a sign that something is going to be good,” I responded, sipping my coffee next to her while jotting down the recipe on a notepad.
That smell had me thinking I was onto something good. Especially since it was an easy breakfast I could make in my Instant Pot.
My Instant Pot. It might be the one thing saving my sanity right now in a season of change.
You see, we are in the process of moving (yuck). Into a house (YAY!!!). But at the moment, my entire house, including my kitchen, is in boxes in anticipation/preparation for the move. The only thing I didn’t pack was our Instant Pot. Because you can do all the things in an Instant Pot….at least that was what I was going to challenge myself to do.
You see, this is not your basic move. Its not a move-boxes-from-one-home-to-the-next. This is a oh-our-new-house-isn’t-ready-for-two-weeks-after-we-have-to-be-out-of-our-current-home kinda move. So our life is not only going into boxes, but into storage and us into an Air BnB for two weeks….with a lovely yet minimal kitchen.
And while this would be the perfect excuse to enjoy eating all the meals out at the adorable little cafes that are walking distance from our Air BnB, let’s be honest and say that eating out loses its appeal when your HAVE to eat out. It’s just not fun. And you miss home cooked food (and frankly, so does your gut).
So, my Instant Pot is coming to the Air BnB with me and will continue to be our main source of cooking for the next few weeks. And I’m actually kind of looking forward to being forced to see what I can make in it! To get creative and pump out some extra awesome Instant Pot recipes for you guys…because if I can cook it in my crazy life in a tiny kitchen….then it might just work for your life too.
And this recipe for Instant Pot Morning Glory Oatmeal is totally coming into the chaos with me! Naturally sweetened and easily adaptable to fit your own personal taste…this oatmeal recipe is the *perfect* fall breakfast!
SUGGESTED ADAPTATIONS
1. No Instant Pot? Make it on the stove top! Combine the oats, water/milk, carrots, apple, raisins, cinnamon, ginger and nutmeg in a medium sauce pan. Bring to a boil and then lower heat to medium-low. Simmer uncovered, stirring occasionally. Cook for about 20 minutes or until oats are tender. Serve and top with coconut, nuts and extra raisins.
2. Adjust the ingredients to fit your personal taste or needs! Oatmeal is very forgiving! Not a carrot fan, do less or skip it all together! Have a nut allergy in the house? Skip the nuts all together! Use this recipe as a jumping off point to make am amazing breakfast that you love and adore!

Instant Pot Morning Glory Oatmeal {dairy-free}

Made with ease in your Instant Pot, this the perfect breakfast for those busy back-to-school mornings!
ingredients:
3 cups water
1 cup full-fat coconut milk, almond milk or more water
1 cup steel cut oats
1 1/2 cups grated or finely chopped carrots (about 2 large carrots)
1 cup shredded or finely chopped apple (about 1 large apple)
1/3 cup organic raisins (look for a brand with no added sugar and that is sulfate free)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
3/4 cup shredded unsweetened coconut
maple syrup or honey to taste and option
favorite nuts, to taste and optional
instructions
In your Instant Pot, combine oats, water, milk, carrots, apple, raisins, cinnamon, ginger and nutmeg in your instant pot. Stir to combine.
Place the lid on your Instant Pot and lock it into place. Be sure that the valve is switched to “sealing”.
Cook on MANUAL high pressure for 4 minutes. Once timer goes off, let the pressure naturally release for 20 minutes. Manually release remaining pressure.
Serve and top with coconut, nuts and extra raisins. Enjoy warm!

I would say about 3 days

Yes, but you’d probably need to reduce the cooking time a bit
What’s the advantage of doing this in and instant pot? It seems like it takes less time on the stovetop.
I like that I can prep it the night before and set a delay so it starts cooking when I need it to. Or to set it and forget it while I get ready in the morning. Stove top is fine if that is what you prefer

How would you explain that?
I am not sure I follow? Did the IP read “burn” or did the oatmeal come out burnt?

My IP doesn’t have the “burn” function that I know some does, but that usually happens when there isn’t enough liquid. With 4 cups of liquid in this recipe, that should be more than enough to prevent burning.

I have, stored it in the fridge overnight and then placed it into my IP in the morning to cook. The apples browned but looked the same after cooking.
