Instant Pot Creamy Tomato Basil Soup is going to give you the warm fuzzies all over! Full of that classic flavor we all grew up on (and probably dunked a grilled cheese or two in), this dairy-free, Paleo, Whole30 complaint soup is made with ease in your Instant Pot in a matter of minutes and puts the processed canned stuff of our youth to shame.

We are in the middle of a weird move. Lots of stages and steps. Lots of wheels in motion. And lots of stuff that makes me want to burn all of my possessions and go and live off the gird and make my clothes out of tree bark for the rest of my life.

If you can’t tell, I don’t like moving… it brings out an overly dramatic side of me.

Anyway, we are truly smack dab in the middle of this move. We moved out of our little apartment last week and don’t get the keys to our new house until this weekend. While in transit between homes, we are staying at a little Airbnb owned by some dear friends of ours.

The Airbnb is cute, quiet, comes with a giant backyard slide and a garden bursting with end-of-summer tomatoes and strawberries. And I do mean bursting! The first day we were here, we picked so many tomatoes that a salad would have just put a dent in them.

I should also mention that this cute, quiet, awesome little Airbnb also has a cute quiet little kitchen that lacks a stove and oven. So I am currently cooking all of the things in my Instant Pot. An adventure for sure, but one I am kind of enjoying testing my creativity and resourcefulness with.

Here I am, with only an Instant Pot as a heat source and oodles of tomatoes. What do you think came to mind? Yep, Instant Pot tomato soup.

Stop for a moment and think about the coziest memory to you have? Maybe its warming up after a legendary snowball fight when you were 10. Maybe its sitting by a fire with a purring cat on your lap. Or maybe its sleeping into your-stupidly-comfortable-bed past noon before children. Whatever that cozy memory is…this soup is basically the edible version of that thought.

So creamy and without dairy

It is seriously full of flavor and oh-so creamy even without dairy! It is the perfect thing to use up those end-of-summer tomatoes and an easy little recipe to stock your freezer with for busy weeknight dinners. Or, be a rebel and enjoy it now!

I love to throw mine (hot or cold) in a travel mug to sip on for breakfast or as on-the-go lunch! Paired with a salad, grilled chicken or another favorite protein, Instant Pot Creamy Tomato Basil Soup is going to become a regular thing in your house!

Instant Pot Creamy Tomato Basil Soup {Whole30, Paleo}

Ingredients 

  • 3/4 cup full-fat coconut milk
  • 1 medium yellow onion peeled and roughly chopped
  • 2 large garlic cloves peeled
  • 4 cups broth or stock
  • 2 tablespoons coconut oil or avocado oil
  • 28 ounces chopped tomatoes (about 2 1/2 cups)
  • 16 ounces can tomato paste
  • 1 teaspoon dried oregano
  • 1 cup loosely packed fresh basil
  • 1 1/2 teaspoon sea salt or to taste
  • 1-2 pitted dates (optional)

Instructions 

  • If you are using dates, place pitted dates in a bowl of hot water. Soak for 15 minutes to soften. After they are done soaking, drain the water and place in a blender.
  • Add all remaining ingredients except broth to blender. Blend until smooth and mixture has an even consistency.
  • Add tomato mixture to the Instant Pot and stir in the broth.
  • Place the lid on the Instant Pot, lock in place and turn the valve to sealing. Select the manual setting and set to cook for 10 minutes on HIGH pressure. It will take the Instant Pot about 10 minutes to get up to pressure.
  • Once the cook time is up, switch the valve to venting to quick release the pressure.
  • Remove lid and enjoy immediately!

Notes

Adding the dates are an optional step and can be omitted. However, they help to cut the acidity of the tomatoes and I find help to create a better balance to the soup.

    Can something else be used in place of the dates to help cut the acidity?

      If you aren’t avoiding natural sugars, you can add a little honey or maple syrup
