Suggested Adaptations

  • Want to add some extra flavor to the dressing? Grate in some fresh ginger and/or garlic. About ½ tsp each would be great.
  • Like things spicy? Add some Asian style hot sauce to the dressing or drizzle some chili crisp sauce over the top.
  • Make it gluten free by using gluten free tamari or coconut aminos.
  • Use raw zucchini instead of cucumber. Zucchini can be eaten raw and can be used in this salad in place of the cucumber.

Ingredients
 

  • 1 English cucumber
  • 4 large carrots, peeled, about ½ pound
  • 1 Tablespoon low sodium soy sauce , or tamari or coconut aminos for a gluten free option
  • 1 Tablespoon rice wine vinegar
  • 1 Tablespoon granulated sugar, or honey
  • 1 teaspoon toasted sesame oil
  • ¼ cup avocado oil
  • pinch of salt , or to taste
  • 1 Tablespoon sesame seeds
  • 2 scallions, thinly sliced (optional)

Instructions
 

  • Cut the cucumber and carrots into thin matchstick shapes, about 2 inches long by 1/4-inch thick. Place in a large bowl.
  • Whisk together the soy sauce, vinegar, sugar, sesame oil, and oil. Pour the dressing over the cucumbers and carrots and toss to coat. Sprinkle with a pinch of salt and mix again. Taste and add more salt as needed.
  • To serve, sprinkle the salad with the sesame seeds and sliced scallions, if using. Enjoy right away or chill until ready to serve. This salad is best served the day it’s made because cucumber will continue to release water and soften as it sits.
