If you had asked me many moons ago when I first started this blog, I would have never…ever…EVER imagined that I would have been writing a recipe with “fat cups” as part of the title.
Yet, here I am….singing my love for these Chocolate Almond Butter Fat Cups from the rooftops and writing about it for all to see. Because health is a a journey and not a final destination and I have learned a lot on this journey.
If you have followed me for a while, you know my quest for a healthy lifestyle started with a 70 pound weight loss. It was a major step in my journey (a journey that I continue to walk today) and that taught me some valuable lessons.
One of those lessons being that having the right kinds of treats in the house can make all of the difference.
I have a sweet tooth. That is a fact. And a serious one to boot. And that sweet tooth simply won’t die. I don’t care how long I go without a sweet treat or how much sugar I cut out of my diet, the fact of the matter remains that I really love savoring the occasional sweet goodie.
But, if I keep a small stash of healthier goodies and treat and goodies in the house, I am MUCH less likely to run to the 7-Eleven and grab whatever crappy ice cream they sell there just to get my sweet tooth to shut up.
In fact, when I have Chocolate Almond Butter Fat Cups kicking around my fridge, one little cup is all I need to zap the strongest of craving. Chocolate Almond Butter Fat Cups
Chocolate Almond Butter Fat Cups are something I have kicking around my fridge at all times. One little cup is all I need to zap the strongest of craving. And the best part is, I am satisfying that sweet tooth calling with healthy fats and protein mixed with natural sweeteners and amazingly healthy cacao powder. A treat that actually serves my body instead of weighing me down.
1/2 cup melted coconut oil
1/2 cup creamy almond butter
1/2 cup coconut butter
1/2 cup cacao powder
3-4 pitted dates, or to taste (omit for keto or a sugar free option)
- Combine all ingredients in a food processor and process with an “S” blade until smooth. Scrape down sides and blend again.
- Portion out mixture between 12 lines muffin holes.
- Pop into your freezer or fridge and chill until hard.
- Remove from muffin tin and store in an air tight container in fridge or freezer
