I’m not sure that there is a more heavenly flavor combo than bacon and sweet potato. The perfect blend of sweet meets savory in this easy peasy in these oh-so delicious Bacon Wrapped Sweet Potatoes. They are sure to steal the show at any party, potluck and gathering….if you can stop your family from eating them all!

Keeping it real

Hi guys, I’m Jenn over at Pretend it’s a Donut and I’m so honored to be guest posting while Taesha is finishing up her awesome e-book!  I’ve been following The Natural Nurturer for a while now and for good reason.  Her recipes are bomb.com and I just adore her down to earth, sweet, and real personality.  As a mom it’s always so wonderful to see other people giving their best to their children, but also keeping it so real!!

I know how hard it can be to get children to eat (I have 5 that sometimes need some pretty good convincing) but I also know how important real, wholesome foods are for their little growing bodies!

Midnight ninjas

Just like Taesha, I always put a variety of foods on their plates for them to try and I’m always telling them how good it is for them. And some nights we have conversations that go a little something like this!

Kid: “I’m not eating those carrots, gross”

Me: “okay, well did you know that carrots are really good for your eyes which means you will be able to see in complete darkness like a ninja”

Kid: “no way, okay I’m eating all of them!”

Me: “awesome! I know you’ll love them, just don’t do any midnight ninja moves on me or your papa!”

Usually the talk of sweet ninja moves works for them and it’s a win win for everyone. I also know that kids are kids and sometimes you just can’t sweet talk them into eating anything.  Just know that that is OKAY. Just keep trying. Eventually they will eat what’s on their plates!

Bacon Wrapped Sweet Potatoes

One of my favorite side dishes to feed my family are these BACON WRAPPED SWEET POTATOES. My kids are not huge fans of sweet potatoes on their own, but wrapped in bacon, they become magical and my kids can’t get enough! (Bacon will do that to you)

Bacon Wrapped Sweet Potatoes

Ingredients 

  • 2 sweet potatoes, peeled and cut into wedges
  • 1 package bacon
  • Extra Virgin Olive Oil Spray
  • 1 fresh rosemary sprig
  • a sprinkle of sea salt

Instructions 

  • Preheat oven to 400 degrees.
  • Take your bacon pieces and slice them in half. Set aside.
  • Peel your sweet potatoes and slice them into wedges.
  • Place on a baking sheet and lightly spray them with olive oil.
  • Bake for 8 minutes then pull baking sheet out.
  • Wrap the bacon around each potato wedge and place back on baking sheet with the ends of the bacon pieces face down on the baking sheet.
  • Turn oven down to 375 and bake for another 10-15 minutes or until bacon is cooked.
  • Place on plate and add your fresh rosemary and a sprinkle of salt.

Notes

  • You want to lightly coat the potato wedges with oil because the grease from the bacon will also go all over them.
