Burgers are a staple dinner many of us grew up chowing down and something that many of us usually keep pretty simple. Ground meat. Maybe a little salt. Maybe some herbs and spices. Mix it all up. Patty it out. Call ‘er done and throw those suckers on to cook.
And thats good! Who can argue with a classic? Certainly not me. But, I also am a lady who can’t help but wonder if she can improve on something that is already amazing and make it a little healthier (while keeping the flavor game strong)!
Like by adding veggies. Adding veggies to all the things is kind of my thing. Why? Because veggies add a healthy little “omph” to a dish, help those veggie-resistant eaters get some plant goodness in, and generally just add amazing flavor and color to a meal!
Yep, veggies are my jam and these turkey burgers rock some beautiful serious veggie goodness…all while being easy to make for your crew.
Okay, truth be told, I made these burgers on a whim in the hopes of using up some half-way-to-the-compost-pile bell peppers and neglected ground turkey that had been chilling in my fridge to its very last day of freshness. And what started out as an attempt to reduce food waste actually turned into a pretty sticking delicious dinner staple that left my family silent as they stuffed them into their faces. Always the sign of a killer recipe.
Are turkey burgers any good?
While some people opt for turkey burgers over all-beef burgers because they tend to be lower in fat, a turkey burger that doesn’t get some special treatment can come out bland and dry. While a little salt and pepper might do the trick for making an all-beef burger mouthwatering, turkey burgers need a little extra help getting themselves to swoon-worthy status. The addition of veggies in these turkey burgers helps to naturally up the moisture and adds a lovely touch of sweetness. Complimented with the saltiness of the coconut aminos (or soy sauce), these turkey burgers bring a lot of flavor to an otherwise unappreciated burger option.
My turkey burgers always tend to fall apart! How do you keep them together?
Thats where the addition of an egg comes in very handy! The egg works as a binding agent, keeping the burger in one pretty patty. If you can’t or don’t do eggs, you can use a “flax egg” (1 tablespoon ground flax meal + 3 tablespoons water) to help these burgers hold their shape.
Can I use other veggies?
No bell peppers wasting away in your fridge? Fresh out of carrots? No worries, you can totally sub in shredded and drained zucchini or spinach finely chopped spinach in these burgers. Check out these Glorious Green Veggie Chicken Burgers for some more veggie-packed burger inspiration.
Can I make these with ground beef or chicken?
Tots! When using ground chicken, you are going to season these burgers the same as you would if you were using turkey. However, ground beef brings a lot more natural flavor and moisture to the table. You can still use it, but depending on how intense you like your flavors….you might consider reducing the coconut aminos/soy sauce to 3/4 of a tablespoon.
