Weird. I know. I own the weirdness. But it’s true. So when I saw green waffles hanging out in the freezer section of a crunchy health food store… I was transformed into the grown-up equivalent of child standing in front of the world’s largest gumball machine.
Awestruck. Giddy. Maybe a little too giddy. I mean, they were green waffles, after all. Not a one-way ticket to Paris. But to a lady who spends many hours of her life trying to think up ways to get veggies into all the recipes, I was pretty jazzed.
I flipped over the package to read the ingredients. Eggs. Oatmeal. Banana. Spinach. Baking soda.
Hmmmmm. That looks a lot like the ingredients in my Oatmeal Green Smoothie Muffins. It wasn’t exact, mind you. But enough to get the wheels in my head turning.
Oatmeal Green Smoothie Muffins was, hands down, one of my most popular recipes last year. Especially among kiddos. Which, of course, made them super popular with moms and dads. I can’t tell you how many adorable pictures of toddlers with cheeks full of green smoothie muffin I have received over Instagram DM. Its a heartwarming bonus I get in this food blogging gig.
So when I saw that these (stupidly overpriced, yet wildly healthy) frozen waffles reminded me so much of a recipe I knew I could easily make, I tossed them back into the freezer and went home to heat up my waffle iron.
Waffles are an easy morning breakfast staple. I think most of us grew up with a box of Eggos buried in the freezer for those mornings when our parents just couldn’t rally to make breakfast. They are portable. They are delicious. However, typical waffles fail to be terribly healthy. Loaded with sugar, refined flours, no real protein or fiber and (if we are eating the Eggo-style ones) oodles of additives and preservatives.
That is where Oatmeal Green Smoothie Waffles come in. They boast all of the perks of any other waffle (easy to transport, easy to freeze, makes children squeal with joy when they are served to them), but they are SO MUCH HEALTHIER than Eggos (sorry Eggos, don’t mean to bash on you…but, come on). Loaded with protein from eggs, fiber from oats, naturally sweetened and chock full of amazing veggie goodness from spinach (that you can’t taste, I promise), these waffles are THE waffles our children NEED to grow up eating on their way to the bus stop.

Green Smoothie Waffles
These easy to make ahead, breakfast game changing Oatmeal Green Smoothie Waffles are going to be your new freezer staple. They are naturally gluten free, packed with protein, fiber, naturally sweetened and (my favorite part) loaded with veggie-goodness that your children will be THRILLED to have show up on their plate!
- · 3 eggs
- · 1/4 cup coconut oil, melted + extra for greasing
- · 2 very ripe bananas
- · 1/4 cup honey/maple syrup
- · 1/2 tablespoon pure vanilla extract
- · 2 cups gluten free rolled oats, uncooked
- · 1/2 teaspoon baking soda
- · 1 teaspoon apple cider vinegar
- · 1/4 teaspoon sea salt
- · 1 teaspoon cinnamon
- · 2 -3 handfuls baby spinach or greens
- Heat up waffle iron and brush some coconut oil on both the top and bottom griddle.
- While your waffle iron heats up, prepare the batter by combining all ingredients in your blender.Pulse until mixture is smooth and all ingredients are well incorporated.
- Pour about 1/3-1/2 cup of batter onto the griddle, just enough to coat the bottom griddle.
- Close and flip waffle iron, cooking waffle for 4-5 minutes.
- Enjoy warm with extra maple syrup, nut butter, honey or chia jam.
- Let leftovers cool and store in fridge for up to 4 days or in freezer for a month.
