The ice cream truck music is the bane of my existence.
I’m guessing many of you parents feel my pain during the summer.
That music…it creeps down the street, sneaking in open windows meant to let in fresh air and the sounds of birds singing. And before you can snap the windows shut or blast other music loud enough to drown out the sounds of the ice cream truck….little ears hear it. And once those little ears hear the ice cream truck…the begging starts. As does the whining.
Now, I am certainly not opposed to saying “no” to my child nor occasionally treating her to a scoop of cookies ‘n cream on a sugar cone. Nope, I totally embrace both of those parts of raising a healthy balanced child. But I also like to have something healthier on hand to offer her (and myself) on those extra hot days when an ice cream cone really does sound stinking good. And something that will make enough noise to make to drown out that damn ice cream truck music. Luckily, this recipe fits both of those requirements. 5-Minute Tropical Sorbet is coming at ya!
I seriously made this one day in a frantic effort to avoid having my daughter hear the approaching ice cream truck. We had been at a birthday party the day before (treat ratio for the week was more than hit there) and I really wasn’t in the mood for the “but plleeeeassseeeeeeee, Mommy” battle. So I tried to think of a way to make as much noise as possible to mask the music.
Heads up. Nothing makes more noise than frozen chunks of fruit in a food processor (except for maybe nuts and bolts in a food processor, but hopefully no one is trying that little experiment on for size). So this is totally not a recipe to whip up during the baby’s nap time.
But it is a recipe to make when you want a healthy frozen treat that is full of vitamins, fiber and nutrients. A great recipe for when you want to feel good about the sweet treat you are enjoying and know that it is actually doing something positive for your body. A great recipe for making sure the ice cream truck rolls right on by your house because your kiddo is too busy enjoying this naturally sweet 5-Minute Tropical Sorbet to notice that it is almost ice-cream-truck-o’clock.
- 2 cups frozen mango
- 1 very ripe banana
- 2 cups frozen pineapple
- about 1 cup full-fat coconut milk
- 2-3 tablespoons honey or maple syrup or to taste (optional)
- 1/2 tsp pure vanilla extract
- Combine honey/maple syrup, vanilla extract, frozen mango, banana, and frozen pineapple in your food processor or high-powered blender.
- Adding the coconut milk a little at a time, pulse the ingredients together. Do this until desired consistency is reached.
- Once mixture is smooth, enjoy immediately. Scoop leftovers into a freezer-safe container and freeze right away.
