Gingerbread is the taste of Christmas. Period. Hands down. The end.
Everything about gingerbread is cozy, warm, and reminds me of my mother’s kitchen. A sniff of gingerbread and I hear Christmas songs. Eating gingerbread cookies would be enough gingerbread for a rational person, but I am me and took it a step further and gingerbreadized my coffee.
I found this recipe to be plenty sweet for my taste, but adjust amount of syrup as your little heart desires.
1 can coconut milk
1/4 cup molasses
3 tablespoons maple syrup
1 teaspoon ground ginger
1/2 teaspoon cinnamon
dash of nutmeg
Combine all ingredients in a small sauce pan and whisk over medium-low heat until all spices are well blended. Use immediately in a mug of hot coffee or store in an air tight container in the fridge for up to 5 days.
