I find the farmer’s market to be very inspiring when it comes to dreaming up new dishes. While visiting one of our typical vendors this morning, I spied a huge bag of oranges.
“How are they?” I asked the farmer.
“Oh, the sweetest they have been all year.” he replied.
Sold. I forked over my cash and threw the bag over my shoulder, thinking of the pomegranates and avocados already in my bag.
This salad is simple as simple gets. I didn’t even add a dressing to it. A little salt and pepper to taste suited me just fine, as this salad has so much flavor on it’s own.
In a medium bowl, combine:
4 handfuls of mixed greens or baby spianch
1/2 cup pomegranate seeds
1 orange, peeled and cut into small pieces
1 avocado, peeled, pitted, and cubed
Toss the ingreidents a few times to mix and serve!
